apple pie

The oldest written apple pie recipe was published in the United Kingdom during 1381. Sugar was called white gold during those days, therefore pies were sweetened with dried fruit like figs & raisins and with spices.

As always I am sharing a recipe subjected to my adaptations.

 

If you can find the pastry tool called the "dough blender" please buy one. It is an excellent tool for rubbing butter into flour. It is also efficient when you do not want to work the gluten in tart and quick bread dough.

dough
  • 250 g flour
  • 100 g whole wheat flour
  • 25 g sugar
  • 1/2 tsp salt
  • 150 g butter, dice
  • 30 g yogurt
  • 1/3 cup ice cold water
filling
  • 1200 g apple, firm cooking apple of your choice
  • juice of 1/2 lemon
  • 100 g sugar
  • 1 tsp grape molasses
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • a pinch of nutmeg
  • a pinch of salt
  • 30 g butter, small dice
for the top
  • 1 egg
  • 1 tbsp water

preparation

  1. For dough, sift both flours.
  2. Add 25 g sugar and salt, stir.
  3. Add 150 g butter and yogurt, cut the butter into the flour using a knife to get a grainy texture.
  4. Add water, a spoonful at a time, til the mixture holds when pressed between your fingers. You may not have to use all the water.
  5. Form into two discs. Cover in plastic wrap separately, refrigerate the dough for 1 hour.
  6. For filling, peel and core the apples. Slice into the bowl with lemon juice and mix so they don't discolor.
  7. Add sugar, molasses, spices and salt to apple slices and mix throughly.
  8. Take the dough out of the fridge and let them rest for 5 minutes. Roll out the dough on a lightly floured work surface to about 15 in (38 cm) diameter and line a 12 in (30 cm) pie tin, trim even with edge.
  9. Fill with prepped apples with all its juice and level. Dot with butter.
  10. Roll remaining dough to fit top of pie, place over filling. Trim and seal the edges.
  11. Whisk egg & water, brush on the dough. Cut slits in crust with a sharp knife.
  12. Bake 40-45 min in a preheated 390°F (200°C) oven till golden brown.
  13. Eat warm with a scoop of vanilla ice cream. Enjoy! :)
  • 1 çbk = 1 çorba kaşığı = 1 table spoon = 15 ml
  • 1 tsp = 1 tatlı kaşığı = 1 tea spoon = 5 ml
  • 1 cup ~ 1 su bardağı = 1 cup = 240 ml

  1. ps: most commonly used apple is granny smith, I also love using fuji.
  2. ps: can add raisin or dried fig, adjust sugar accordingly.
