glutenSİZ havuçlu kek

gluten-free carrot cake

bugsbunnyCarrot owes its shiny orange color to carotene, and also its sweetness allowed it to be used as fruit. Middle ages where sweeteners were rare and expensive, carrot with its high sugar content next to sugar cane, was used in desserts. Though nobody knows the origin of carrot cake, the oldest known written recipe was published in a Swiss house management book of 1892.

applesauce

We all know apples to be red, yellow, green or something in between these colors. What we do not know is that there are over 7 thousand known types of apples, İn the States 50 different apple types, and in other countries even less than that exist in the marketplaces.

Before refrigeration, applesauce making was a cheap alternative and it was a method for preserving apples for months. I helped long winters and droughts.

Consuming pork and apples together, and even cooking together goes back years to prehistoric ages. Acidity of apples help in digesting fatty meat.

Applesauce is generally served with pork and poultry. It really looks good on pancakes, waffles and French toast. It can be eaten as a light dessert with sprinkled cinnamon or nutmeg. It is a tasty baby food. I prefer to use applesauce for nearly half of the oil to be used while making cakes and taking down the fat rate. Until now did not use it for replacing butter, but it might work.

Some apples are sweet and some are sour. Some are soft and some are firm. While making applesauce I prefer Granny Smith for it is both sour and firm. But instead of sour and green apples you can easily make applesauce with red and firm apples.

somon salamura

salmon gravlax

In order to preserve highly nutritious meat and fish, hunted or grown, to be used at hard times or during long journeys, various methods had been employed since prehistoric times.

The oldest method is to dehydrate the food. Until the end of the 19th century the only way to preserve meat and fish to be consumed on a safe basis was extracting all the liquid by salting, spicing and/or smoking.

Orijinal sushi, nare-zushi, was quite different than what we know today. It started as a long time preservation method for fish. 1 mouthful of fish was salted, rolled in vinegar flavored rice and left to the side. In time the souring and rotting rice can be cleaned and the preserved fish could be eaten.

Salt, takes all the humidity from meat and fish by way of osmosis. Sugar, does not affect the taste but softens the sharp taste of salt. This recipe where I use both salt and sugar is a gravlax variation enjoyed in northern Europe.

pizza

pizza

Cilalı taş devrinde pişirilen ekşi mayalı pideler pizzanın atası sayılabilir. 🙂

For centuries, even though they all had different names for the same flat bread, Egypt, India, Balkan Countries, Italy, Greece and Finland baked the same bread. They say that some even used herbs and spices on this bread. Switching from flat bread to pizza started with the usage of tomato on top. Tomato, came to Europe from the American continent and they originally thought that it was poisonous and used the plant for decorative purposes. At the end of the 18th century poor villagers of Napoli started using tomatoes on flat bread along with the usage in their meals. It was so delicious that they started selling this new thing on the streets. Because Noblemen loved the taste, it switched from street vendors to shops. In 1830 Antica Pizzeria Port'Alba was opened in Napoli as the first in town and it still is selling pizza today.

Many of the Italians still prefer eating pizzas simply as marinara with tomatoes, thyme, garlic and olive oil or as margherita with tomatoes, mozzarella, and fresh basil. Pizza evolved in the US. They added more ingredients and various types of meat. Sizes got bigger, and they say selling pizza by the slice is an American invention.

Young and old, everybody has a favorite pizzeria and a topping. In our house my pizzas are the favorites. My husband and son, with their honest criticisms, molded the way I think in time and made me arrive at this recipe that I'm sharing, which they always love eating.

spaghetti alle vongole

vongoleChristopher Morley Kimse spaghetti yerken yalnız değildir demiş, çünkü tüm ilgisi makarnaya yönelmiştir.”demiş. Gerçekten de, bir elinizde kaşık ve diğerinde çatal ile spaghettiyi her lokmaya sos gelecek şekilde toparlayıp ağızınıza atarken, sarkan ucu keyifle hüplerken, hele hele Napoliten mutfağın klasiklerinden spaghetti alle vongoledeki midyelerin içlerini tek tek ayıklayıp yerken dünya pek umurunuzda değildir. 🙂

Klasik kitabım Ekrem Muhittin Yeğen’in 2. cildi Tatlı-Pasta Öğretimi in Turkish on one hand and "Timeless Tastes" Eskimeyen Tatlar diğer tarafımda, işin içinden çıkmaya çalıştım.

ginger

Ginger is one of the oldest known spices, maybe the oldest. Like its other relatives of the ginger family (galingale, curcuma, turmeric), ginger cannot be obtained from seeds but only by dividing its roots, which shows that it has been cultivated under the control of man for a time long enough to make it lose its basic characteristic as a wild plant. It was domesticated somewhere in Southern Asia in prehistoric times. The fact that the nomads brought this spice with them is that this plant was different from the natural vegetation in places where it grew. This is quite understable as ginger is a spice, a herb and a medicine at the same time. It is believed to have gone from Southern China to the Philippines and to the Spice Islands, from where it spread east and westward.

Starting from the early Roman Empire doctors to the Hellenic, Arabic and Persian pharmacists, ginger was known for its warming and stomachic characteristics, as an appetizer and an antidote for various poisons. It was also considered a must in its birthplace China at that time in what is known today as Cantonese cuisine.

It is known that the Spaniards were engaged in the ginger trade between Jamaica and continental Europe in the 16th century. It was one of the major spices in Europe during the Middle Ages. Gingerbread goes back to that period. Ginger beer and ginger ale originated in the 19th century when British publicans sprinkled ginger into their beverages.

Ginger rightfully still keeps its place in traditional medicine. It is found in various forms all over the world. Large quantities come from Jamaica, India, Africa and China in this order. Jamaican ginger is considered to be the best ginger. As it usually grows in tropical climates, it is mostly known in powder form, as a preserve or for its ripe, aged root. The major producers of powdered ginger are India and China. Young roots found in tropical markets have a very thin shell. They can easily be grated, sliced and even squeezed to extract their juice.

Be sure that the skin of the ginger root you buy is unblemished. A wrinkled skin proves the root is dry and that it is too late to use it. It has to have a fresh and aromatic fragrance. You can keep it tightly wrapped in the refrigerator for 3 weeks without peeling it, and 6 months in the freezer. You can also peel it, place it in a closed jar topped with dry wine and keep it in the refrigerator for 3 months.

Add 1/4 cup thinly sliced ginger to 1/2 cup honey that you warmed through in a bain marie and let it macerate for a week. Add 1-2 tbsp of this concoction and 1-2 tbsp lemon juice to 1 cup boiling water to remedy cold. You can also use it to sweeten lemonade in summertime.

enerji topları

energy balls

King of England, at the beginning of the 13th century declared the first food control regulation law called Assize of Bread. This law forbids the usage of pea or bean flour in bread dough by the bread makers. Since then a game of cat & mouse is going on between the food industry and the public.

Close to the end of the 19th century, energy containing elements of food, namely protein, fat and carbohydrate had been recognized and research on food was rapidly increasing. In order to avoid malnutrition or less nutrition of the 2.World War soldiers, based on scientific research, amounts of energy(calories), protein and 8 must vitamins and minerals were scaled and noted. the last 40 years of the 20th century, our feeding habits moved from "not enough" to over consumption. From rich feeding based on whole grains, fruit and vegetables, we moved towards more oil and sugar containing alternatives. Over the years research on food, applications and the target of public interest moved from food safety and fighting against malnutrition to the most suitable and balanced feeding. And the last 25 years most of the research is done on healthy diets.

Resimde günümüzde önerilen sağlıklı beslenme tarzını görebilirsiniz. Çok şükür piramit yerine tabak kullanmayı akıl ettiler sonunda. 🙂 Önümüzdeki yıllarda ne değişiklikler olacağını hep birlikte göreceğiz.

I learned about the concept of nutrition value, and the answers to questions like how to calculate the value for a specific meal, while I was working on my "All Sports Cafe Sevgiyle" book. It has been a long time since I acquired the knowledge but for the first time I used it for these energy balls. Percentages were calculated based on a scale for children 4 and above and adults, using a base of 2000 kilocalories of nutrition value as a daily requirement.

Nutrition value for a single energy ball   calories 40 kcal - 2.0%   fat 1.3 g - 1.9%   protein 1.2 g - 2.4%   carbohydrate 6.5 g - 2.2% (fiber 1.1 g - 4.5%)

peynirli börek

cheese börek

Adam adama gerek olur, iki serçeden börek olur diye atasözümüz bile varmış. 🙂

One of the basics of Turkish kitchen is börek, and it is still present in various kitchens from North Africa to the Balkans where The Ottomans reigned. Each region and sometimes each household has a börek of its own. The recipe I am sharing is a simple börek that comes from my "Mom&Dad Home" and with my touch during the years became of "Our Home".
