Jamie Oliver is one of my idols. He won my appreciation not only by being a renown chef, but with his works on trying to teach everybody about "real food". This is an adaptation of one of his recipes.
ingredients
- 1 kilogram new potato
- 1 red onion
- 2 cloves garlic, crush
- 200 ml cream
- 1 cup milk
- 2 tbsp olive oil
- 1 tbsp miso paste
- 1/8 tsp nutmeg
- 1 tbsp fresh thyme, chop
- 3 tbsp parmesan cheese, thin grate
- 1/4 cup aged kashari cheese, thin grate
preparation
- Scrub and wash the potato. Cut bruised and green parts and discard. Slice very thin using a food processor or a mandoline or a grater.
- Slice the onion the same way. Add potato, onion, garlic, cream, milk, olive oil, miso paste, nutmeg, thyme and parmesan to a 12 in (30 cm) cast iron pan (any heat resistant pan will do). Mix well. Put on medium heat. Bring to boil stirring occasionally. Cover with foil or put on the lid and lower the heat. Cook 6-7 min.
- Take off heat, sprinkle aged kashari cheese. Cook covered in a preheated 410°F (210°C) oven for 10 min. Remove lid, bake until golden.
- 1 çbk = 1 çorba kaşığı = 1 table spoon = 15 ml
- 1 tsp = 1 tatlı kaşığı = 1 tea spoon = 5 ml
- 1 cup ~ 1 su bardağı = 1 cup = 240 ml

- ps: Can substitute 1 tsp soy sauce for 1 tbsp miso paste.
- ps: Can substitute 3-4 canned sardine for miso paste. Also use the oil instead of olive oil.
