The name is börek, but it's sweet like dessert. They think it has a 200 year history. It is a challenging dessert made for special days in Rize & Artvin region. Even though it cannot replace the hand rolled phyllo dough, today's ready made phyllo dough makes everything much easier.

ingredients
- 80 g granulated sugar
- 4 tsp starch
- 4 tsp flour
- 750 ml milk
- 10 g butter
- zest of 1 orange
- 20 sheets baklava phyllo dough
- 80 g butter, melt
- 100 g powder sugar
preparation
- Mix granulated sugar, starch, flour and milk in a pot, cook to pudding consistency. Take off the heat.
- Blend in 10 g butter & orange zest. Set aside to cool to room temp.
- Place a sheet of phyllo dough into the pan. Using a pastry brush, brush the phyllo sheet with melted butter. Repeat 9 more times until it is 10 sheets thick.
- Whisk the pudding to aerate and pour on the buttered sheets, carefully level.
- Butter and layer rest of the phyllo sheets on top of the pudding.
- Cut to big slices and pour the remaining butter over.
- Bake 45 min in a preheated 340°F (170°C) oven till golden brown.
- Remove from the oven, dust with powder sugar. Enjoy when cooled.

- 1 tsp = 1 tatlı kaşığı = 1 tea spoon = 5 ml
