energy balls

King of England, at the beginning of the 13th century declared the first food control regulation law called Assize of Bread. This law forbids the usage of pea or bean flour in bread dough by the bread makers. Since then a game of cat & mouse is going on between the food industry and the public.

Close to the end of the 19th century, energy containing elements of food, namely protein, fat and carbohydrate had been recognized and research on food was rapidly increasing. In order to avoid malnutrition or less nutrition of the 2.World War soldiers, based on scientific research, amounts of energy(calories), protein and 8 must vitamins and minerals were scaled and noted. the last 40 years of the 20th century, our feeding habits moved from "not enough" to over consumption. From rich feeding based on whole grains, fruit and vegetables, we moved towards more oil and sugar containing alternatives. Over the years research on food, applications and the target of public interest moved from food safety and fighting against malnutrition to the most suitable and balanced feeding. And the last 25 years most of the research is done on healthy diets.

I learned about the concept of nutrition value, and the answers to questions like how to calculate the value for a specific meal, while I was working on my "All Sports Cafe Sevgiyle" book. It has been a long time since I acquired the knowledge but for the first time I used it for these energy balls. Percentages were calculated based on a scale for children 4 and above and adults, using a base of 2000 kilocalories of nutrition value as a daily requirement.

Nutrition value for a single energy ball   calories 40 kcal - 2.0%   fat 1.3 g - 1.9%   protein 1.2 g - 2.4%   carbohydrate 6.5 g - 2.2% (fiber 1.1 g - 4.5%)

ingredients

  • 15 grams pistachio, chop
  • 15 grams walnut, chop
  • 15 grams sunflower seed
  • 90 grams oatmeal
  • 100 grams dried fig, small dice
  • 3 tbsp water
  • 35 grams sun dried apricot, small dice
  • 10 grams raisin
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger powder
  • a pinch of salt

preparation

  1. Spread pistachio, walnut, sunflower seed and oatmeal on a tray. Roast in the oven pre heated to 350°F (180°C) for 15 min, stirring twice. Take out of the oven, let it cool.
  2. Add water to dried figs, let them swell for 15 min. Heat non-stick pan on medium heat, pour figs with water in. Cook off all the water while constantly stirring and crushing. It will be paste consistency.
  3. Add apricot and raisin, keep cooking and crushing. Sprinkle cinnamon, ginger and salt, stir well.
  4. Add oatmeal mix, blend well. When it cools down to workable heat, knead to combine. Use table spoon to portion and shape rolling in your hand.
  • 1 çbk = 1 çorba kaşığı = 1 table spoon = 15 ml
  • 1 tsp = 1 tatlı kaşığı = 1 tea spoon = 5 ml
  • 1 cup ~ 1 su bardağı = 1 cup = 240 ml

  1. ps: check that oatmeal has GLUTEN-FREE label, though oatmeal does not contain gluten, cross contamination can happen because they may be processed in the same facilities as gluten-containing grains.
