tomato sauce

The shape of tomato used for making paste is thinner and longer. With less water and more meat. And it is good for making tomato sauce for the winter, tomato puree and canned chopped tomato.

In order to peel the tomato cut the stalk and dip into boiling water. When the peel starts curling and getting wrinkled take it out and put it in ice water. This will stop the cooking process and when the peel is cold enough you can pull it with your fingers and it will come off easily. The stubborn pieces can be removed with a knife.

  • 3 tbsp extra-virgin olive oil
  • 3 medium onion, fine dice
  • 6 cloves of garlic, thin slice
  • 6 italian pepper thin slice
  • 2 tsp hot sauce or hot red pepper paste
  • 3 kilograms tomato peel and chop, let it drain in a colander
  • 1 tbsp sugar or grape molasses
  • 3 tbsp red wine
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup basil, chop, optional

preparation

  1. Heat olive oil over medium heat. Add onion, garlic and pepper, stir. Lower the heat a bit, cook 5-10 minutes till they get soft stirring occasionally.
  2. Add hot sauce and stir well.
  3. Raise the heat, add tomato, sprinkle sugar. Stir well. Bring to boil, lower the heat. Cook for 30 minutes stirring occasionally.
  4. Add wine, salt and black pepper, stir. Cook till it really thickens.
  5. Take off heat, if using blend in basil.
  6. Pour into a bowl in an ice bath and quickly cool the sauce to room temp. Portion to your liking into zip-top bags, zip while pushing as much air out as possible and freeze. OR pour into sterilized jars, secure the lid and leave them to cool untouched for at least 24 hours.
  • 1 çbk = 1 çorba kaşığı = 1 table spoon = 15 ml
  • 1 tsp = 1 tatlı kaşığı = 1 tea spoon = 5 ml
  • 1 cup ~ 1 su bardağı = 1 cup = 240 ml

  1. ps: can chop 300 g capia pepper and add with tomato.
  2. ps: can substitute thyme for basil, add with salt & pepper.
