I just wanted to share a bread recipe that would put an end to all the excuses above.

This type of bread made with baking soda, specially known as the Irish soda bread, got into our literature and kitchen, after the invention of baking soda and its wide use in England in 1830s. Before baking soda pearl ash was used for the same purpose as a rising agent in making bread.

ingredients

  • 3/4 cup yogurt
  • 1/4 cup milk
  • 1 tsp honey / grape molasses / sugar
  • 1 tbsp olive oil (optional)
  • 250 g flour ( I use 150 g flour + 100 g whole wheat flour)
  • 3/4 tsp salt
  • 1 tsp baking soda

preparation

  1. Whip yogurt, milk, honey and olive oil in a bowl.
  2. Sift flour, salt and baking soda. Make a well in the center of the flour mixture, add yogurt mix. Blend in with a fork. As the dough comes together, shape with floured hands. Place on a parchment paper lined tray. Using a serrated knife, score top of dough about half way deep in an "X" shape. The purpose of the scoring deep is to help heat get into the center of the dough while it cooks. Sift flour on top.
  3. Bake in a preheated 390°F (200°C) oven for 30 min, rotating once. Enjoy warm.
  • 1 çbk = 1 çorba kaşığı = 1 table spoon = 15 ml
  • 1 tsp = 1 tatlı kaşığı = 1 tea spoon = 5 ml
  • 1 cup ~ 1 su bardağı = 1 cup = 240 ml

  1. ps: if you have sourdough discard, add about 100 g to the yogurt and milk mixture, it enriches the taste.
  2. ps: Can add 1/4 cup oatmeal.
  3. ps: Can add 1-2 tbsp sunflower or pumpkin seed. Can sprinkle on top.
  4. ps: If you can get buttermilk, substitute 1 cup for yogurt & milk.
