One of the grandmas, Saadet Taylan was into cooking, and with the courage and motivation provided by her husband, she even participated in cooking courses given by professional chefs. Mom gave 2 of her recipe notebooks to me when I started my cookbook collection. Once in a while I go through its pages to see how things were done at her time and I really enjoy doing it. Today as I was chatting with Aydın about baton sale, and I remembered seeing it in my grandma's notebook. Picture on the right is her original hand written recipe. I stayed with the original recipe and even added the aged kashari cheese she used in her yeasted baton sale recipe, and of course made my own adjustments. Fresh out of the oven, still hot and we devoured half of the tray, they must be tasty.

ingredients

  • 125 grams cake flour (low gluten flour)
  • 125 grams whole wheat flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/8 tsp lemon zest
  • 65 grams butter, cold, small dice
  • 2 tbsp strained yogurt
  • 1/2 tsp honey
  • 1 + 1 egg
  • 2 tbsp milk
  • 25 grams aged kashari cheese (can substitute parmesan), thin grate
  • 1 tsp sesame seeds

preparation

  1. Sift both flours, salt and baking soda, add lemon zest, mix.
  2. Cut the butter into the flour using a knife to get a grainy texture.
  3. Fold in yogurt and honey with a fork.
  4. Make a well in the center, add 1 egg & milk. Blend in with a fork.
  5. Sprinkle and blend aged kashari. Knead 2-3 min to bring the dough together. Will be soft and wont stick to hand.
  6. Divide into 8 equal portions about 60 g, form into balls. Cover with a cheesecloth, rest for 30 min.
  7. Whip the egg well.
  8. Form 16 in (40 cm) long ropes from each ball. Brush with egg, sprinkle sesame seeds and divide into 4.
  9. Place them 1/2 in (1 cm) spaced on parchment paper lined tray. Cover with a cheesecloth and rest 20 more minutes.
  10. Bake in a preheated 340°F (170°C) oven for 30 min, rotating once.
  • 1 çbk = 1 çorba kaşığı = 1 table spoon = 15 ml
  • 1 tsp = 1 tatlı kaşığı = 1 tea spoon = 5 ml
  • 1 cup ~ 1 su bardağı = 1 cup = 240 ml
  • measurements
  1. ps: if you prefer firmer sticks, halve the baking soda amount and make the ropes 20 in (50 cm) instead of 16 in (40 cm).
  2. ps: can substitute any seed to your liking for sesame seeds or not use at all.
