Turkish Agricultural authorities started a campaign with the "do not waste your bread" slogan which is ekmeğini israf etme in Turkish. And according to a research made after the campaign, bakeries and all the other bread makers included, daily bread production is 90.9 million loaves, and unfortunately around 3 million of them stay in shop without being sold. Waste in restaurants, hotels, staff and student cafeterias and homes bring the number up to 4,9 million standart (250 g) loaves. Most of this waste becomes animal feed and the rest goes to waste.

This recipe gives you an easy way to use stale bread with your own ingredients.
ingredients
stale bread crumble- 100 grams stale bread
- 50 grams oatmeal or stale bread
- 1 tbsp sugar
- 1/2 tsp cinnamon
- 1/4 tsp ginger powder
- 1/4 tsp clove powder
- 20 grams butter, melt
- 1 tbsp grape molasses
- 600 grams firm apple, small dice
- 100 grams dried fig, swell in water for 15 min and small dice
- 2 tbsp sugar
- 1/4 tsp cinnamon
- juice and zest of 1/2 lemon
- 1 tbsp grape molasses
preparation
stale bread crumble- Grind bread in a food processor.
- Add oatmeal, process again.
- Add sugar and spices, process once again.
- Add butter and molasses, toss to coat well.
- Line bottom & sides of a 8x8 in (20x20 cm) pyrex with parchment paper. Spread half the mixture and press.
- Spread the prepped apple filling and lightly press.
- Scatter rest of the crumb mixture on top, it'll barely cover the filling.
- Bake for 45-50 minutes in the preheated 340°F (170°C) oven.
- You can add a dollop of cream or yogurt and eat warm.
apple filling
- Mix apple, fig, sugar, cinnamon, lemon juice & zest and molasses in a bowl.
- 1 çbk = 1 çorba kaşığı = 1 table spoon = 15 ml
- 1 tsp = 1 tatlı kaşığı = 1 tea spoon = 5 ml
- 1 cup ~ 1 su bardağı = 1 cup = 240 ml

- ps: Can substitute sun dried apricot or raisin for dried fig.
