As I have noted when talking about my baked pumpkin mücver, pumpkin is both a symbol of Halloween and of Thanksgiving in the States. Pumpkin pie is a must on Thanksgiving tables, and the idea of this celebration that takes place on the 4th Thursday of each November, is blessing the coming year and the abundance of its crops.
Pumpkin was first grown in Central America around 5.500 BC. It was one of the first food item brought from the New World by the European explorers. UK where the pie culture goes long ways back in history, pumpkin was immediately utilized. One can very easily find pumpkin pie recipes in the cook books of the 17th century. It is assumed that this specific pie found its way to the States with the first British settlers.

ingredients
vegan pie dough- 1/4 cup oil (I use extra virgin olive oil)
- 2 tbsp applesauce
- 1/4 cup cold water
- 3/4 cup flour
- 2/3 cup whole wheat flour
- 1 tsp sugar
- 1/2 tsp baking powder
- 1/4 tsp cinnamon
- 1/4 tsp salt
- 2 eggs
- 1/2 cup cream
- 2 1/2 cup pumpkin puree (about 1 kilogram steamed pumpkin)
- 1/2 cup milk
- 50 grams cream cheese
- 1 tsp vanilla extract
- 100 grams sugar
- 1/2 tsp cinnamon
- 1/4 tsp ginger powder
- 1/2 tsp clove powder or allspice
- 1/4 tsp salt
- 1/8 tsp ground nutmeg
preparation
vegan pie dough- Mix oil, applesauce and water in a bowl.
- Sift both flours, sugar, baking powder, cinnamon and salt, stir. Make a well in the center.
- Pour the wet mix in the well. Bring together using fork. Knead 8-10 times.
- Line an 8 in (20 cm) round pyrex with this dough by pressing to the bottom & sides. (I think you can roll out this dough between two sheets of parchment paper and then line, haven't tried yet.)
- Refrigerate until ready to use.
- Whip the eggs well.
- Add cream, whisk til risen.
- Add pumpkin puree, milk, cheese and vanilla extract one by one, blend well after each addition.
- Mix sugar, cinnamon, ginger, clove, salt and nutmeg. Blend into pumpkin mix.
- Remove the pie dough from the fridge, pour in the filling and level. Cover with aluminium foil.
- Bake covered for 30 min in preheated 320°F (160°C) oven. Remove the foil and keep baking 45 more minutes. Remove from the oven, you can eat when cooled to room temp. :) Store leftovers in the fridge.
- 1 çbk = 1 çorba kaşığı = 1 table spoon = 15 ml
- 1 tsp = 1 tatlı kaşığı = 1 tea spoon = 5 ml
- 1 cup ~ 1 su bardağı = 1 cup = 240 ml
