Granola_advertisement,_1893Did you know that Dr.Harvey Kellogg who developed corn flakes with his brother William Keith Kellogg in 1902, found a twice baked grain mixture 12 years before the flakes, called it Granola, but could not market it properly and was unsuccessful with the product.

The name Granola gained a major importance with the healthy food movement and in 1960s became a healthy hippie food. Today it became a household item for all those who care for healthy eating.

  • 1 cup buckwheat (greçka)
  • 1/2 cup quinoa
  • 1 cup oatmeal
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 2 tbsp sesame seeds
  • 2 tbsp flax seeds
  • 2 tbsp chia seeds
  • 3/4 cup hazelnut, roughly chop
  • 2 tbsp cranberries
  • 2 tbsp sun dried apricots
  • 2 tbsp dried prunes
  • 1/4 cup chocolate chips
  • 1 tbsp cocoa
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp salt
  • 1/3 cup applesauce
  • 3 tbsp molasses(I used beet molasses)
  • 3 tbsp flower honey
  • 1 egg white

preparation

  1. Soak buckwheat and quinoa in separate bowls in room-temp water for 30 min, strain. Wash them well and strain again. If too wet, give them a squeeze.
  2. Mix well oatmeal, buckwheat, quinoa, all the seeds, hazelnut, dried fruit and chocolate chips in a bowl.
  3. Sift cocoa, cinnamon, ginger powder and salt on the mixture, stir well.
  4. Mix applesauce, molasses, honey and egg white. Add to the mixture. Blend well, it should be sticky. Let it rest for 15 min.
  5. Spread 1/4 in (1/2 cm) thick on a parchment lined tray, pack tightly. Cook in a preheated 300°F (150°C) oven for 30 min. Take out of the oven, cut into squares. Put back in the oven and cook for 25-30 min more.
  6. It'll keep for a month in air-tight container.
  • 1 çbk = 1 çorba kaşığı = 1 table spoon = 15 ml
  • 1 tsp = 1 tatlı kaşığı = 1 tea spoon = 5 ml
  • 1 cup ~ 1 su bardağı = 1 cup = 240 ml

  1. ps: Can just use 2 1/4 cups oatmeal instead of buckwheat, quinoa and oatmeal combo.
  2. ps: Can pick and choose the seed mix according to your taste as long as the total is 2/3 cup.
  3. ps: Can use any kind or mix of nut instead of hazelnut.
  4. ps: Can pick and choose the dried fruit mix according to your taste as long as the total is 1/3 cup.
  5. ps: Can adjust the quantity of molasses & honey according to your taste.
